Margret-Houston2015 03Mar Recipes-Cornbread FeatureHere’s a look at a few of Margaret Lea Houston’s recipes for us all to enjoy as we celebrate General Sam Houston’s birthday on March 2nd and her birthday on April 18th. Ingredients:

  • 1 cup cornmeal
  • 1 cup flour
  • 2 pinches salt
  • 2 Tbs sugar (or to taste)
  • 2 tsp baking powder
  • 1/2 cup lard
  • 1 cup buttermilk mixed with 2 eggs

Directions

  1. Crumble lard into dry ingredients and then add egg and buttermilk.
  2. Do not over-stir.
  3. Bake in a pie pan, which has been greased with lard and previously heated, for approx. 15 minutes.
